Makes the meat better and less fishy tasting. I also add a tablespoon of lemon juice. I let them soak overnight and bake them the next afternoon and everybody who's tasted it loves it. I put my recipe in the recipes section under "crappie in a sack."

I use about 1-2 tsp of salt for a pound or two of fillets.  I also add white vinegar and let them soak in the brine for about 20-30 minutes.  It pulls slime and blood from the meat and seems to make them taste much better.
