Title: Easy Fish Fry Mix
Post by: beckslabs on November 02, 2010, 01:41:03 PM
Dry ingredients

1 box of Jiffy mix  Cornbread mix
4 cups of flour
1 tbls of Lawry's seasoned salt
1 tbls Lemon Pepper
1 tbls salt
1 tbls pepper
1 tsp garlic powder
1 tsp onion powder

Wet ingredients

1 12oz  can of beer
2 eggs
2 cups buttermilk

Put all dry ingredients in large zip-loc baggie.  Beat eggs then add beer and buttermilk in large bowl. Place fish in bowl and let it soak overnight. When ready to cook take fish from milk bath and coat in dry mixture. Deepfry until golden brown.

This dry mixture also works well with french fries. Just coat and deepfry.

This is the closest I have come to Drake's. It is just a little sweeter due to the Jiffy mix.

Place zip-loc in freezer after you have used what you need. This will keep for a long time. We have used ours over and over. When it gets low just add more and keep re-freezing. ;)

Sounds like some of the same stuff you put in hushpuppies! Do you have a good recipe for those? I like them to have a garlicy flavor but I never know how much to add.
