Title: smoked fish spread

I've been making this for a few months and no complaints. 
Fish filets (I've used cats, gills, walleye, saugeye and crappie) soaked in water for 24 hours.
Drain then soak 24 hours in apple juice. After they are drained they are ready for the smoker. Use apple or cherry wood. Smoke until they flake apart my are 5 hours. Chop with food processor until fine. Then chop red, yellow,  orange bell peppers and sweet girkin pickles. Just enough for flavor and color. Mix with fish and add mayo to hold it together. It can be put on crackers or on bread as a sandwich. People that don't like fish like this.

gonna smoke some crappie next weekend n try this out, sounds good.
