now im curious how everyone treats there fillets. do you soak them in salt water, milk, nothing?   lately i just wash my perch in some fresh water and vac pac them. others like walleye and bigger fish i soak in salt water for a few hours and rinse for a few, then vac. smaller fish have a delicate flavor so i dont salt them. i try to bleed my eyes in the boat but if you have a bunch it looks like a disaster in my small barge.   except for trout  them stinky slimey rascals just stink up the boat and dont go home with me unless there in a plastic bag..   thats just me..

I treat them with the love and respect they deserve, then I treat them to a little hot oil! Yummy!

I filet them and then rinse. (I found a strainer that hooks on the middle part of my double  sink. It works awesome.) Rinse all the blood and scales off then lay them out on a paper towel and pat dry. I also trim the red meat off of my walleye/saugeye filets.  Put meal size portions into vacuum bags and double seal them.

Is vacuum sealing better than putting the fillets in bags of water?

In my experience vacuum sealing works best. It keeps the filets fresh and free of freezer burn.

I think it is. I used to freeze them in water but sometimes I'd have filets that were on the edge of the bag that would get freezer burnt. I can keep fish (or deer) for over a year and it's still like they are fresh. Plus it takes up less room in the freezer and is easier to stack. If you decide to get a vacuum sealer my advice is to get the bags from amazon. Can't think of the name brand but you get way more for less money and they hold a seal better. And like I said before I double seal all my bags.

All my fish get rinsed in cold water after cleaning and rinsed again before cooking. I freeze my fish in water in gallon freezer bags in meal size portions. My larger eyes get zippered too, usually before freezing. I never have soaked them in milk or salt water. I usually only keep eyes and perch and a few panfish on rare occasions.
